Potato shred stir fry

Admittedly, a potato stir-fry sounds weird but this is actually a traditional Sichuanese dish (Suan la tu duo si – sour, spicy potato), which we made for the first time tonight. It’s cheap, simple & delicious.

Ingredients
2 large potatoes peeled & cut into fine strips
2 cloves of garlic minced
1 teaspoon ground Sichuan pepper
1 teaspoon dried chilli flakes (or you can use dried whole chillis)
3-4 tablespoons of soy sauce
2 tablespoons brown rice vinegar
1 teaspoon sesame oil
2 tablespoons vegetable oil for frying
Coriander & sliced spring onions to garnish

1. Submerge potato strips in a big bowl of water, wash and drain to remove some of the starch
2. Heat oil in a large pan or wok and fry off the garlic for 10 seconds or so until aromatic
3. Throw in the drained washed potato strips, pepper, chilli, soy sauce, vinegar and sesame oil and toss together
4. Place a lid on the pan and, tossing every few minutes, cook for 10-15mins until potato starts to get tender but not soft (the dish should be dry like a stir-fry). Garnish with coriander & spring onions just before serving
