Spiced peanuts

There’s nothing like some salty spicy pre-dinner snacks to get the appetite going. This is faster, less fancy version inspired by ‘Sichuan-Style Peanuts’ by Umami Holiday.

Ingredients
350g bag roasted peanuts (can use salted or unsalted)
1 teaspoon Chinese five spice powder
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground Sichuan pepper
1/2 teaspoon dried chilli powder
Fine sea salt to taste
2 tablespoons vegetable oil

1. Mix all the spices in a small bowl
2. Heat the vegetable oil and add the spices
3. Allow the spices to fry for 10seconds or so then add the peanuts and toss to coat with the spices for another 30 seconds or so
4. Empty out into a bowl and allow to cool before serving
